INGREDIENTS
1 tbsp. vegetable oil
1 lb ground beef or chicken (according to your preference)
1 carrot, julienned
1 Asian pear, julienned
½ cup shredded kale
1 cup chopped cooked rice noodles
8 to 10 Boston lettuce leaves
1 green onion, chopped
¼ cup roasted peanuts
1 handful chopped fresh coriander leaves
FOR THE SAUCE
½ cup hoisin sauce
1 tbsp. tamari sauce
2 tsp sesame oil
2 tsp mirin or honey
In a small bowl, combine “sauce” ingredients and set aside.
In a skillet, heat vegetable oil over medium-high heat and add ground beef. Cook for 5 minutes, stirring regularly.
Add the carrot, pear and cabbage and continue cooking for 2 minutes.
Add the sauce and mix well. Continue cooking for 2 minutes.
Remove from heat and add rice noodles. Mix well. Leave to cool for 10 minutes.
Spread mixture over lettuce leaves and garnish with green onion, peanuts and cilantro.
